This amazing grape variety, esstablished in France in the Middle ages by the pilgrims
from their return of Santiago de Compostella’s road.

Planting : 1999
Terroir : Clay limestone red soils. Small parcel, around 1 ha, full sun.
Viticulture : For more than 20 years, we cultivate and treat our vines with organic methods. Herbs are deeply buried via mecanical work. The terroir keeps then all its natural richness.
Prunning : Guyot short
harvest : Manual thinning. Mechanical harvesting. To take benefits from the night cooling, harvesting is acheive at 4 am.
Vinification : The harvest is destemmed and then submitted to a short maceration (few days). The alcoholic fermentation last around 20 days in stainless steel tanks under controlled temperature.
Embottling : This wine is not filtered. A deposit can be formed with time. The embottling is made by gravitation process.
Production : Medium, around 40Hl/ha.
Variety history : This grape variety come from Catalogna. It’s a cousin of black grenache. It is nowadays considered as a rare variety (few hundreds of hectares). It was brought in Languedoc in Middle age by pilgrims from Compostela.
