Terroir : Grey clay-limestone soil. Typical from the region.
Viticulture : For more than 20 years, we cultivate and treat our vines with organic methods. Herbs are deeply buried via mecanical work. The terroir keeps then all its natural richness.
Prunning : Guyot (short)
harvest : Manual thinning. Manual harvesting.
Vinification : Grapes are destemmed, and endure a controlled cold maceration. Punching and manual winding are made in cuve inox. The wine is then aged partially in new oak barrels during 14/16 months.
Embottling : The Chant de la Terre is embottled, without filtration, by a careful gravitational process. Bottles rest in regulated temperature and constant humidity ( 60/70%) during some months before being sold.
